Extra virgin olive oil is the highest quality category of olive oil that one can consume. By definition it must have free fatty acid level below 0,8%, zero organoleptic defects and a fruity flavor. For better quality, it must be derived by cold extraction in temperature below 27oC.
VARIETY: Tsounati
The variety Tsounati or Mastoeidis is the second oldest variety in Greece, cultivated since the Minoan civilization. The olive oil produced is rich in beneficial phenolic compounds and a medium to intense fruity with aromas of grass, artichoke, tomato, rosemary, wildflowers and nuts. A medium to intense bitter and even more intense spicy aftertaste.
ACIDITY: 0,27
Acidity is one of the quality parameters set by IOC for extra virgin olive oil. By definition EVOO it must have free fatty acid level below 0,8%. This value is always determined by a chemical laboratory and cannot be detected by sensory analysis (you cannot taste it).
AROMAS: Green fruity aroma with notes of fresh-cut grass, herbs, artichoke, green almond and avocado
Contrary to many people’s beliefs, olive oil aromas are not endogenous to the fruit, but are produced by the activity of olive enzymes in the olive oil extraction process (crushing-malaxation). They depend largely on the variety of the olive, the degree of ripeness of the fruit at harvest as well as the milling practices.

As any fresh and very sensitive to oxidation product, olive oil must be consumed within 18 months from the harvest time, for enjoying all its aromas, flavors and health benefits. In the Northern Hemisphere where Greece is, the harvest is taking place from October to January.

Description

PAMAKO mountain organic extra virgin olive oil of Tsounati variety is characterized by its high content of polyphenols and has a health claim indication (European regulation 432/2012). It has one of the highest concentrations of hydroxytyrosol – tyrosol and its derivatives in the world. According to this European regulation the consumption of 20 gr. of high phenolic extra virgin olive oil is enough to protect blood lipids from oxidative stress. Consuming PAMAKO one needs only 4 gr. daily to have the above health benefits.

In order to maintain the high quality of the product and at the same time all the health benefits, it is packaged in dark bottles with a special outer membrane that, like a mirror, reflects light and prevents photo-oxidation and therefore the degradation of the quality of the olive oil. During bottling, argon gas is injected into the bottle so that the olive oil does not come into contact with oxygen (which is the other great enemy of olive oil) as long as the bottle remains closed because this one centimetre of air in the bottle is able to oxidize the olive oil, degrading it significantly.
