TYPE: Extra Virgin Olive Oil
Extra virgin olive oil is the highest quality category of olive oil that one can consume. By definition it must have free fatty acid level below 0,8%, zero organoleptic defects and a fruity flavor. For better quality, it must be derived by cold extraction in temperature below 27oC.
VARIETY: Koroneiki
Koroneiki is Greece’s most widely cultivated olive variety and is particularly associated with Crete and southern Greece. It produces high-quality olive oils with pronounced fruity aromas, characteristic bitterness and peppery notes. Its aromatic profile often includes freshly cut grass, artichoke, herbs, green fruit and almond. .
ACIDITY: 0,35
Acidity is one of the quality parameters set by IOC for extra virgin olive oil. By definition EVOO it must have free fatty acid level below 0,8%. This value is always determined by a chemical laboratory and cannot be detected by sensory analysis (you cannot taste it).
AROMAS: Fresh-cut grass, artichoke, green fruit and ripe fruit.
Contrary to many people’s beliefs, olive oil aromas are not endogenous to the fruit, but are produced by the activity of olive enzymes in the olive oil extraction process (crushing-malaxation). They depend largely on the variety of the olive, the degree of ripeness of the fruit at harvest as well as the milling practices.
TASTE: Balanced, medium bitterness with a more pronounced peppery finish. Fruitiness: 5.1 | Bitterness: 3.5 | Pungency: 4.1
Taste describes the balance between the three main positive sensory attributes of extra virgin olive oil: fruitiness, bitterness and pungency. Their intensity depends on the olive variety, ripeness at harvest, growing conditions and production method. A well-balanced extra virgin olive oil combines these characteristics harmoniously, without any sensory defects.
HARVEST: 2025
As any fresh and very sensitive to oxidation product, olive oil must be consumed within 18 months from the harvest time, for enjoying all its aromas, flavors and health benefits. In the Northern Hemisphere where Greece is, the harvest is taking place from October to January.
Frequently Asked Questions about Olive Oil
Περιγραφή

Kritsa PGI Extra Virgin Olive Oil is produced in one of Crete’s most historic olive-growing regions, around the traditional village of Kritsa in Lasithi.
The olive groves stretch from the Gulf of Mirabello up to approximately 375 metres above sea level, benefiting from the warm, dry and semi-mountainous climate of eastern Crete. The olive trees are of the Koroneiki variety, one of Greece’s oldest and most celebrated olive cultivars.
The olives are harvested by the members of the Agricultural Cooperative of Kritsa and processed shortly after harvesting using cold extraction, helping preserve the olive oil’s freshness, nutritional value and characteristic fruity profile. The cooperative, established in 1927, today brings together approximately 1,200 local olive growers.
Its organoleptic profile is particularly well balanced. It offers medium-intense fruitiness, with aromas reminiscent of freshly cut grass, artichoke, green fruit and ripe fruit. On the palate, a moderate bitterness is followed by a more expressive peppery sensation, creating a clean and persistent finish.
According to the 2026 sensory evaluation, the olive oil achieved a fruitiness intensity of 5.1, bitterness of 3.5 and pungency of 4.1, with zero organoleptic defects, confirming its classification as Extra Virgin Olive Oil.
Its 2026 laboratory analysis records an acidity of just 0.35%, significantly below the maximum threshold required for the Extra Virgin category.
Kritsa olive oil has also received numerous international distinctions through the years. One of its most important milestones was its recognition at the Mario Solinas Quality Awards, while the brand continues to receive awards in international olive oil competitions.
Excellent served raw over salads, bread, grilled vegetables, pasta, fish and meat, but equally suitable for Mediterranean cooking.
